Bon Appetit Eat Local Challenge 2022
Pepperdine Dining Services, in partnership with the Center for Sustainability, is
pleased to share that Bon Appétit is hosting their annual sustainability-focused “Eat
Local Challenge” for the first time at Pepperdine on Wednesday, September 28, inside the Waves Cafe.
The focus of the Eat Local Challenge is to introduce guests to their local food system by inviting select local vendors to share about their sourcing practices and by providing educational materials on other local vendors with whom Bon Appétit partners. Bon Appétit Chefs Peter Alfaro and JeTrey Williams will feature ingredients from Lusamerica Fish, Inc., Underwood Ranches, and local produce vendors who are long-term Bon Appétit partners, each of which is located within 150 miles of the University.
The chefs will prepare a meal using only 100 percent locally sourced ingredients (with the exception of salt), which will be offered as a lunch entree option from 11:30 AM to 2 PM in Waves Cafe. The recipe for the meal will be provided as an educational, take-home material on how to utilize local ingredients in meal preparation. We welcome you to take part in this exciting event to learn more about Bon Appétit’s sustainability efforts, engage with environmentally-friendly vendors, and enjoy a delicious, locally sourced meal!
